Savoury mini pancakes with chickpea hummus and seasonal crispy vegetables
Savoury pancakes are an excellent alternative to the sweet version, easy to prepare, they are soft, tasty and perfect for a brunch with friends.

Ingredients
For pancakes
Organic egg 1
Organic egg whites 100 g
Mixed flours (type 2, chickpeas and lupins 70 g
Natural yeast (cream of tartar and bicarbonate or bicarbonate and lemon) 5 g
Turmeric, salt, pepper, powdered garlic q.s.
Extra virgin olive oil 1 tablespoon
For the chickpea hummus
Cooked chickpeas 150 g
Extra virgin olive oil 3 tablespoons
Tahini sesame cream 1 tablespoon
Turmeric, salt, pepper, powdered garlic q.s.
Lemon juice q.s.

Method
Blend all the ingredients to obtain the pancake mixture, just a spoon to create a pancake, so accordingly adjust the number of spoonfuls to place in a previously greased non-stick pan with the lid, as soon as the surface thickens overturn on the other side to complete cooking.
For the hummus, blend everything until a smooth, homogenous and creamy mixture is obtained.
Plating
Spread the hummus on the surface of each pancake and insert 4 at a time onto a Love Skewer, closing the row with crunchy vegetables. Store them on a large Decor Gondola decorated with large green leaf salad. With smaller Decor Gondolas you can serve hummus and vegetables separately with the Elegant Mini Forks.
