Saffron cauliflower au gratin is an appetizing side dish. Very easy to make in little time, it goes down a treat.
Saffron adds a marvellous colour and flavour to this side dish, which is made even more delectable by hazelnuts and will be a hit with everyone.

Ingredients
White cauliflower 1/2
Green cauliflower 1/2
Purple cauliflower 1/2
Saffron powder 1 sachet
Butter 50 g
Shelled hazelnuts with their skin 12
Salt q.s.
Gourmet Skewers
Method
Cut all the cauliflower into florets and boil in salted water for 6-7 minutes. Strain while still firm and leave to cool.
Cut the hazelnuts into slivers. Melt the butter with the saffron in a saucepan and pour on the skewers. Sprinkle with the hazelnuts and serve.
Plating
Pierce the florets with the Gourmet skewers, alternating the colours, and arrange the skewers on a rectangular plate.
